Kala Channa & Coconut Curry Greens

I've had a bag of Trikona's Kala Channa beans for about 5 months and haven't done anything with them. They are Indian Black Garbanzo Beans. So last night after mentioning in my post to SpiceHut that I needed help cooking greens Indian-Style, I decided to soak some of these little guys overnight. The recipe is on the bag, and here it is:

Kala Channa:
2c. kala channa beans
1 medium onion, chopped (I only use Walla Walla's)
3 chopped garlic cloves
1 Tbsp. garam masala
1 tsp. chili powder or paprika (I used chili)
4 Tbsp. lemon juice or tamarind paste (I used fresh lemon juice)

Directions:
Wash 2 c. of beans well. Put beans in a pot with plenty of water to allow for expansion and let soak overnight. Next day, drain, add 4 cups of water and salt (Kosher salt 2 tsp.) to taste. Bring to a boil, lower heat and simmer for two hours, stirring occasionally. Add chopped onion, chopped garlic cloves, garam masala, chili powder, and lemon juice or tamarind paste. Simmer for another 15 min. and serve. Serves 6

CameraDawktor's Coconut Curry Greens:
4c. chopped bok choy
4c. chopped red chard
1/2 medium Walla Walla sweet onion, chopped
2 large cloves garlic, chopped
4 Tbsp. coconut oil
1 tsp. indian curry powder, mild
1/8 tsp. cardamom
1/2 tsp. dried marjoram, crushed

Directions: Rinse bok choy and chard, dry partially with paper towels. Leave some water on the leaves as this will help with steaming them. Chop greens into 1/2 in. thick pieces. Place in 4qt. saucepan adding 1/4 c. water. With lid on, steam on medium heat for 6-8 min. or to the tenderness of your liking.

While greens are cookin, heat 3-4 Tbsp. coconut oil in saucepan on medium heat. Add garlic and onions, cooking until translucent and slightly browned. Add seasonings and let oil mixture bubble.


When greens are done, drain off any remaining water. Toss greens with warm spicey oil mixture. Makes approximately 3 c., 1 cup per adult.

*Papa D doesn't normally enjoy anything I make with curry powder. He's not a big bean fan either, but he really enjoyed the Kala Channa. I will definitely make them again. 2 of my kids ate them too without complaining.

**Also, I expected Papa D to prefer the other way I cook my greens but he really enjoyed this a lot. Max-Ay asked if he was eating seaweed. After I told him no, he continued eating every bite and really seemed to enjoy it. The other two ate it as well without complaining. I feel like I have a success story!! Yeah, next time I will try a different oil and spice combination.

    It definitely worked...and it also worked like that I felt guilty cose I thought I couldnt help you out in time...you're right...bit silly of me, I guess !

    I don't usually make my kids eat greens, but some of the exotic things I have made they have asked why I don't give them some. Besides, I need to start eating it on a regular basis, so why not introduce it to them too.

    Usually I just make them eat about 2-3 bites.

    It helps to have Asian Auntie's- - they are exposed to many different "non-traditional" American tastes!

    Anyhoo...spicehut, my other friend, you can link to her site 2x here on these comments or in my links. She is the Indian Curry Goddess!!! Just kidding. If she hasn't posted a recipe like that on her site, she might if you ask her or she may e-mail you one if you are real nice to her!!

    Curry paste is the consistency of bouillon that you get in a jar and keep in the fridge. You scoop it out. I usually find that in the Asian section of the grocers. Curry powder you get in the spice section of the grocers and it is powdery like your other loose, dry, powder spices. Hope that helps and Spicehut is probably the curry Queen, so ask her about that too!!
