Phillipino Chicken Adobo ala Vicky (as told by Happy)


Have you been wondering where I've been? I will give you all the details at a later date. Right now I just want to post this recipe. I hate blog fasts..don't try it. Withdrawls are not a pretty thing unless you have a computer expert to help you. I'll tell you more about him later too.

Chicken Adobo:
10 pieces chicken legs, thighs or wings
5 clove garlic
2 Tbsp. olive oil
1 c. soy sauce
1c. vinegar


Directions:
Put little bit oil in the pan (2Tbsp. olive oil in 4 qt. saucepan)

Add garlic & fry it up a little bit, then add the chicken. (Do not remove skin and fat from chicken). Let it brown a little bit, stirring chicken around every few minutes. This should take about 5-7 min. Use your own judgement!

Pour all soy sauce and vinegar over the top and steam it. (Boil on high heat until chicken is tender)

Cook on high so it will cook down the liquid. You don't want too much liquid. (reduce liquid to half by simmering it).

Serve with hot jasmine rice

Happy would normally serve punsit with this, but I will save that recipe for another day!! Why do I call her Happy? Because 1). she is and 2). her tigalo name means happy
