Potatoes Anna & Recipes from Culinary in the Desert

Last weekend I really rocked out in the baking department making dishes for a get-together w/ some friends from church.

First off was Potatoes Anna. It's a recipe I got from Mamasita about ten years ago, and I am posting it here by memory. Couldn't find the recipe, but turned out tastey!

Potatoes Anna

Ingredients:
1 lb. baby red potatoes
1-2 Tbsp. butter
1/4-1/2 tsp. kosher salt
fresh ground black pepper

Directions:
In medium sized baking dish or 8 in. pie plate, randomly place four thin slices of butter.

Wash potatoes and do not peel skins. Using a food slicer or sharp knife, VERY thinly slice all potatoes. Arange in circular fashion over butter. When you have completed one layer, place 4-5 more dabs of thinly sliced butter, sprinkle lightly with kosher salt and pepper. Continue placing potatoes in circular fashion and topping with butter, salt & pepper until all potatoes are used.

Bake in 350 degree oven for 30-40 min. or until top layer of potatoes are
light brown and crispy. Remove from oven and place large plate or serving platter over potatoe dish. Invert potatoes onto serving plate and serve warm. Serves 4-6.

It is wonderful, slices cheese, carrots, tomatoes, potatoes, zuchinni, is extremely sharp, I cut myself first time using....BEWARE!

First off was
Creamed Cauliflower with Herbed Crumb Topping that was absolutely to die for. You would not believe all the positive feedback I got from this dish. Cooked cauliflower is not something I eat that often, and everyone was surprised at how sweet the dish was. And there was no sugar! Just the cauliflower. Delicious and everyone is looking forward to my making it again. This was the first recipe I have ever stumbled upon when visiting Joe's site, and was waiting for the right opportunity to make it.

The other recipe I got from
Culinary in the Desert was Nutty Peanut Butter Caramel Bars. With only 9 adults at the gathering and 6 kids, there was not one piece of this dessert left to take home. The combination of Skippy Peanut butter, pecans, caramel and chocolate was heavenly. The picture on Joe's blog of this recipe does way more justice to the dessert than any I could have taken, so check the recipe out there.

    I bet you are not such a bad cook! And really, the stuff I make is not time consuming, or maybe I should say, not complex.

    With three kids I don't have time for labor intensive stuff.

    Most of my recipes on this blog are things I watched my mother and grandmother make, so it was easy for me to learn them, I had watched so much.

    I have a feeling you are downplaying yourself!!!
